Cupcake Recipe

INGREDIENTS:

  • 2 cups flour.
  • 1 1/2 cups sugar.
  • 1 1/2 teaspoons baking powder.
  • 1 1/2 teaspoons cinnamon.
  • 1/4 teaspoon ground cloves.
  • 1/4 teaspoon ground nutmeg.
  • 2 teaspoons unsweetened cocoa powder.
  • 1/8 teaspoon ground black pepper.
  • 1/4 teaspoon salt.
  • 1 cup canola oil.
  • 4-5 lightly beaten eggs.
  • 3 medium carrots.
  • 2 medium apples.
  • 1 cup pecans.
  • 51/2 ounce fresh, goat cheese.
  • 41/2 ounces cream cheese.
  • 1 Tbsp unsalted butter.
  • 1/2 teaspoon vanilla extract.
  • 1 cups powdered sugar.
METHOD:
1- Oven should be preheated up to 350°C with a rack in the center.
2- By using suitable large bowl, combine the flour, baking soda, sugar, baking powder, cocoa, pepper, spices and the salt together; stir in the oil and the eggs then in carrots, pecans and apples.
3- Set the cupcake holders in muffin tins.
4- Spoon the batter into the cupcake paper cups about three quarters to the top.
5- Bake about 20-25 minutes.
6- Cool completely.
